And so it was time again for macarons-baking. I’m in my mum’s kitchen and I’ve got all the ingredients. The baking plate is waiting to be used for the very first time. Exciting! I started one evening with preparing the almonds. I bought a good bag of 500 gr sweet almonds. I put them all in a big kettle and let it boil for a few minutes (Not too long, we don’t want them to feel old and gluey). After that you are able to peel them in no time.
For my macarons this time I’ve bought some yellow food colour and lemon essence. For the filling I will be using Danish lemon marmalade. I will mix it with some real butter and sugar. And hopefully it will be a delicious cake to treat my family with on Christmas’s eve!
For christmas I baked macarons again. I was making use of a proper kitchen with all the necessary equipment while I was at my mum's place. This time I had good use of my macaron-plate and this great book:

A great book with lots of inspiration for fillings and flavours! I am sure a lot of the fillings can be used on cupcakes as well, so thats definately something I'm going to try.

When preparing the almonds you need a large kettle and a kitchen towel -preferably a red on in the month of December ;) |

Make a real fine flour. You will even mix it twice -once with the icing sugar as well. |

It went so much better this time. I had a nice and easy recipe and I had the right equipment. I'm excited to continue baking. And like I said, also to try the different fillings for cupcakes or maybe even in a big birthday cake.
I found a hand blender in the kitchen cabinet, hidden and forgotten. I've cleaned it up, it seems to work and hopefully it will work good enough to make a meringue...
